Great served with Chicken or Fish. A true street style Thai dish. I have made this with the whole roasted Massaman Chicken ( Devine recipe on the site ) I have just used 4 carrots but kept the dressing ingredients the same as it is soo good so don’t be afraid to double the the dressing recipe. Ingredients
Salad
- 8-10 carrots, grated
 - 250g green beans, roughly chopped
 - 2 spring onions, finely sliced
 - 250g cherry tomatoes, halved
 - 1 cup fresh coriander, chopped
 - 1/2 cup salted roasted peanuts, chopped
 
Nam Plah Prik Dressing
- 3 tbsp fish sauce
 - 2 tbsp rice vinegar
 - 2 tbsp coconut sugar ( I use 2 tsp of stevia to keep calories down and it was absolutely delicious )
 - 1 clove garlic
 - 2-3 red chillies
 - 1/2 cup fresh lime juice
 - 1 tbsp sesame oil
 
Method
- To prepare the salad, in a large bowl mix the carrots, beans, spring onions and cherry tomatoes with 1/2 of the coriander and peanuts.
 - To prepare the dressing, in a small mixing bowl combine all the ingredients and whisk together until the sugar is dissolved.
 - To serve, pour the dressing over the salad and mix until well combined. Scatter over the remaining coriander and peanuts.
