When I was pregnant with my daughter, man did a crave anything lemon! You name it, if it had lemon in it, I ate it. This is a super easy lemon muffin recipe and they freeze like a dream. Recipe by Melanie Eady.
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1 cup milk
- 1 egg
- lemon rind from 1 lemon
- 75g butter, melted
Method
- Preheat oven to 200°C fan bake. Grease a muffin tray.
- Blend liquid ingredients and add to dry ingredients. Mix well but do not over mix.
- Place spoonfuls of the mixture into prepared trays 3/4 full. Bake for 10 minutes.
- Mix 1/4 cup lemon juice with 1/4 cup sugar and drizzle over the muffins once out of the oven.
