Apricot Crumble Slice

This Apricot slice is just gorgeous, the apricot and coconut go so well together, When I made a batch  for the  pic I  just getting my phone and  by the time I came back a little mouse had come in and stolen a slice !! Thats how good it is .. Recipe was given to me by my Mum Lynne Perkins


The Base

  • 90g Butter
  • 1 cup plain flour
  • 1/3 cup caster sugar

The Filling

  • 1 2/3 cup Finely chopped up Apricots
  • 1 cup water
  • 1/4 cup caster sugar

The Crumble topping

  • 90g Butter melted
  • 1/3 cup coconut
  • 1/4 cup shredded coconut
  • 1/2 cup plain flour
  • 1/2 cup brown sugar


The Base

  1.  Turn the oven to 180 degrees, Line a rectangle baking dish approx 19cm by 29 cms with baking paper
  2. Melt the butter
  3. Stir the flour into the sugar butter mixture
  4. Press into the prepared tin and bake for approx 10 min

The Filling

  1. Combine all ingredients in a pot and bring to boil for approx 10 minutes
  2. Place on top of the hot cooked base

The Crumble

  1. Melt the butter
  2. Combine all the ingredients together and sprinkle evenly over the top of the filling
  3. Bake in the oven for 20 minutes
