Banana Bread

Always good to have a good banana bread recipe and if you have bananas that are ready to be binned don’t waste them just make a couple of loves of this and you can pop them in the freezer, This one I served with maple cinnamon butter , truly scrum. This recipe is from Chelsea Winter

Ingredients


  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 125gm softened butter
  • 2 mashed bananas
  • 1 cup milk
  • 2  eggs
  • 2 cups plain flour, sifted ( or 1 cup plain flour and 1 cup wholewheat flour )
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon

Method


  1. Preheat the oven to 180 degrees
  2. Grease and line a loaf tin approx 25cm
  3. Place the sugar and butter in a bowl and beat until well combined pale and creamy
  4. Add eggs one at time beating well after each addition
  5. Sift in the flour and baking powder
  6. Dissolve the baking soda in the milk and add to the creamed butter mixture with bananas, mix together
  7. Pour into the loaf tin and bake for 1 hour or until the skewer comes out clean

To serve

Either slice and toast and spread with butter or with cinnamon maple butter  or slice untoasted

To make the butter

1/3 cup Butter

1 desert spoon maple syrup

1/2 tsp   cinnamon

Mix all ingredients until smooth, refrigerate or freeze
