Basic Salsa Verde

You can replace the dill with any abundant herb in your garden. Could use rocket, more parsley or even coriander or basil! Recipe by Melanie Eady.


  • 1/2 cup dill
  • 1 cup italian parsley
  • 1/2 cup mint leaves
  • 2 tbsp salted capers
  • 4 anchovy fillets
  • 1 garlic clove
  • cracked pepper
  • 2 tbsp lemon juice
  • 1/4 cup olive oil


  1. Place all the herbs, garlic, anchovies, capers, salt and pepper into a small food processor and blitz in short bursts until roughly chopped.
  2. Add the lemon and oil and process again in short bursts until just combined.
