Basil is really easy to grow over the summer months and making Basil Pesto is so rewarding, Last summer I made so much I froze it into ice cube trays and just took a cube out when I needed some. Recipe by Ripe
Ingredients
- 4 cups of fresh basil leaves
- 1 cup Parmesan cheese grated
- 4 cloves garlic peeled
- 1/2 cup pine nuts ( can use sunflower seeds, almonds , pumpkin seeds as we ll )
- 1 1/2 cups of Olive oil
- 1/2 tsp salt to taste
Method
- Lightly Toast the nuts or seeds
- In a food processor bowl place the basil leaves , parmesan , nuts and garlic
- With the motor running of the food processor, slowly pour in the oil until a thick paste is formed
- Season with salt
- Store in a sealed container in the fridge
