Cucumber and Roasted Peanut Salad

This little salad packs a taste punch , so easy to prepare and looks fresh and crisp, I’m not sure where the recipe came from lovely side dish to curries and asian style dishes.


  • 1 telegraph cucumber, deseeded and either chopped finely or finely sliced
  • 1 deseeded red chilli, finely chopped
  • 1/2 cup roasted salted Peanuts
  • 1/2 tsp salt
  • 1/4 stevia or 1/2 tsp caster sugar
  • 1 tbsp lemon juice


  1. Deseed and slice the cucumber and chilli
  2. Place in a bowl and combine with remaining ingredients
  3.  Cover and Refrigerate until required
