Date and Orange scones

So we are in week 5 of New Zealand’s level 4 Lock down due to Covid -19 and there is nothing open, except the supermarket and Pharmacies and I was really craving a date and orange scone that I would once an while treat myself to at our local cafe. But Guess what I can’t do this right now but all good  these are truly delicious and very easy recipe by Annabel Langbein in her Essential book vol 2 ( a MUST HAVE )

Ingredients


  • Finely grated  zest of an orange
  • 3 cups self raising flour
  • 1/4 cup sugar
  • 1 tsp baking powder, sifted
  • 75g Chilled butter, grated
  • 2 cups pitted dates , chopped
  • 1 3/4 cups buttermilk or natural yoghurt
  • icing sugar

Method


  1. Pre heat oven to 200 degrees
  2. Line a  baking tray with baking paper  and lightly dust with flour
  3. Add the butter to the flour and use a knife or your finger tips and work the butter into the flour mixture to a coarse crumb
  4. Mix in the chopped dates
  5. Add the buttermilk or yoghurt and stir with a knife  until the mixture is just comes together into a soft , wettish  dough , don’t over mix
  6. Turn out onto the prepared tray and  flatten into a circle about 25 cm in diameter
  7. Cut into wedges and arrange with a little space in between
  8. Bake until risen and fully set in the centre and lightly golden about 20 minutes ( my oven 30 minutes )
  9. Dust with icing sugar  before serving  and you have to have butter !!
