Gem Lettuce with Fridge-Raid Dressing

You can seriously use what ever herbs you have in the fridge and perhaps in your garden ( within reason !!) Recipe by Ottolenghi Simple


  • 1/2 very ripe avocado
  • 3cm piece of ginger
  • 1 small garlic clove
  • 2 lemons; 1 tsp zest then 3 tbsp juices
  • 1 green chilli, roughly chopped
  • 1 tbsp tahini
  • 85 ml olive oil
  • 10g basil leave
  • 10g tarragon leaves
  • 10g dill
  • 10g parsley leaves
  • 10g coriander leaves
  • 4 gem lettuces, trimmed and cut lengthways into eights
  • 2 tsp black sesame seeds
  • salt


  1. Put the avocado, ginger, garlic, lemon zest and juice, chilli and tahini, into the small bowl of a food processor with 75ml of the oil and 1/3 tsp of salt.
  2. Blitz to a smooth paste, then add the herbs. Blitz again, then, with the machine still running, slowly pour in 60ml of water until smooth and combined.
  3. Mix the gem lettuce with the remaining teaspoons of oil and 1/8 tsp of salt until combined. Transfer to a platter, spoon over the dressing and sprinkle with the sesame seeds.
