Grilled Chicken Caesar Salad

Nothing beat s great Caesar salad, fabulous midweek meal , you can also deconstruct it and serve on a platter, there are few Caesar salad dressing recipes I use one without cream to make it light and tangy.

Ingredients


  • 4 boneless chicken thighs, skin removed
  • 3 rashers of streakiest bacon or pancetta
  • finely grated rind of 1/2 lemon
  • salt and ground black pepper
  • 1 tbsp oil
  • 1 large Cos or other crisp lettuce
  • 12  or so croutons
  • 1/4 cup parmesan cheese, shaved
  • 1 tbsp each salt and vinegar
  • *optional 4 eggs

Caesar Dressing

  • 1 tbsp oil
  • 5-6 anchovies
  • 2 crushed garlic cloves
  • 1/2 greek yogurt
  • 2 tbsp lemon juice

Method


  1. To make the dressing, Crush the garlic and mash the anchovies with a fork, add the lemon juice  and oil and using a handheld blender blitz to combine  then stir in the greek yogurt
  2. Mix chicken with lemon rind, salt and pepper. Heat a fry pan with a little oil or you can bbq them .  Fry chicken about 6-8 minutes until cooked through. Remove and stand until cooked through. keep to one side
  3. Bbq or fry the bacon rashers and keep to one side
  4. Boil the eggs for 3.30 if at room temp, Peel when cool and cut int o either halves or quarters , set aside
  5. Place lettuce leaves in a large salad bowl. Toss dressing through lettuce. Slice and add chicken pieces. and bacon and gently place the boiled eggs
  6. Throw on croutons, sprinkle with parmesan and grind over black pepper.
  7. Place into  4 serving plates or as a side salad
