Louise’s Thai Beef Salad

Ingredients


  • 600g beef fillet or sirloin cut in 4 thick beef steaks
  • 3 spring onions, thinly sliced
  • 1 1/2 telegraph cucumbers, cut into small fingers
  • 2 tomatoes, diced
  • 3/4 cup mint leaves
  • 1/2 cup coriander leaves
  • 1 cup bean sprouts
  • very thinly cut ( using scissors ) Kaffiar lime leaves
  • Add other vegetables like capsicum, and asparagus, ( blanched ) sugar snaps ( cut into 4’s)
  • Shredded iceberg (optional )

Dressing

  • 2 tbsp fish sauce
  • 1/2 tsp minced red chilli
  • 1 tsp sugar
  • 1 tsp light soy sauce
  • 1/4 cup sweet thai chilli sauce
  • finely grated rind of 1 lemon or lime
  • 2 cloves of garlic crushed
  • 1 tablespoon freshly grated ginger
  • 2 tbsp tamarind concentrate, but dont worry if you don’t have any

Method


  1. Mix all the dressing ingredients together and take 1/4 cup out and toss through the beef , leave for 30 mins
  2. Grill or pan fry beef to rare. Cut into fine diagonal strips while hot. Mix through combined dressing ingredients. Allow to cool.
  3. When ready to serve, toss with other ingredients. Pile onto a serving platter.
