Mint Slice

  • 1 1/2 packets wine biscuits
  • 170g butter
  • 175g sugar
  • 5 tbsp cocoa
  • 1 egg


  • 2 cups icing sugar
  • 45g butter
  • 6-8 drops peppermint essence
  • 3-4 tbsp boiling water


  • 350g dark chocolate
  • 55g butter


  1. Butter a 20cm x 30cm slice tin and line with baking paper.
  2. Blitz the wine biscuits in a food processor until resembling coarse breadcrumbs. Transfer to a large mixing bowl.
  3. In a saucepan, melt the butter, sugar, and cocoa over low heat, stirring until combined. Allow to cool slightly then add the beaten egg.
  4. Pour the butter mixture into the crumbs and mix well.
  5. Press evenly into the prepared tin and refrigerate until firm.


  1. In a small mixing bowl, mix together the icing sugar, butter and peppermint essence, adding enough boiling water until smooth.
  2. Spread over the slice base and refrigerate until firm.


  1. Melt the chocolate and the butter in a bowl over hot water, stirring until smooth.
  2. Spread the chocolate over the mint slice. Refrigerate until the chocolate sets, then slice.
