Pan Fried Chicken with Bocconcini

This is a very simple yet tasty way to cook chicken breasts, Chicken breasts are very cost effective but can dry out very quickly so the key is cooking them to just the point of which they are cooked through. this recipe received rave reviews. As you can see from the picture I used the good old electric frying pan.

Ingredients


  • 4 chicken breast fillets, trimmed
  • 1 tbsp olive oil
  • sea salt and pepper
  • 1 onion, sliced
  • 1 clove garlic, crushed
  • 1 long red chilli, seeded and thinly sliced
  • 400g can chopped tomatoes
  • 1/4 cup chicken stock
  • 4 bocconcini, halved
  • 1 cup basil leaves

Method


  1. Heat a large non-stick frying pan over high heat. Brush the chicken with oil and sprinkle with salt and pepper. Cook for 2-3 minutes each side.
  2. Add in the onion, garlic, chilli, tomatoes and stock, reduce the heat to low and simmer for 2 minutes. Add the bocconcini and cook, covered, for 1 minute.
  3. To serve, place the chicken on a serving plate, spoon over the pan sauce and top with the basil. Serves 4.
