Passionfruit Cheesecakes with Sherbet

A few years ago (2015)  I was watching TV breakfast show and this Recipe was demonstrated and the passionfruit sherbert intrigued me so I made it and it was quite wonderful, I have added to it a bit with some passionfruit lemon cheese stuffed fresh raspberries and passion fruit lemon cheese on the side. Its very easy and fantastic for a dinner party after dinner treat .

Ingredients


  • 7 chocolate biscuits, crushed finely
  • 60g melted butter
  • 220g cream cheese
  • 1/2 cup passionfruit pulp
  • 2 sheets of gelatine, softened in cold water
  • 1/4 cup cream
  • 2 tbsp icing sugar

Sherbert

  • 1 tsp citric acid
  • 1 tsp bicarbonate of soda
  • 3 tbsp icing sugar
  • 2 tbsp passionfruit powder or any flavour jelly crystals

Method


  1. Mix the biscuit crumbs with the melted butter, push into greased and lined muffin trays (or mini pastry pans), to form a base in each one. Refrigerate.
  2. Mix the cream cheese and passionfruit pulp together on high speed until thick and creamy.
  3. Heat the cream until almost boiling, take off heat, stir in gelatine leaves (and icing sugar if you are using) allow to cool slightly then mix in with the cream cheese mixture.
  4. Fill the muffin trays with mixture and refrigerate again for at least 2 hours or until set.
  5. For the sherbert, combine the ingredients and place a small amount on your tongue, adjust to taste. If it is too bitter add more sugar or jelly crystals.
