This recipe is a true 80’s throw back, My mother used to make this dish for her dinner parties all the time and when my sister and I went out knowing Mum and Dad were having a dinner party and we caught up at bar somewhere in town we used to say to each other race you home for the left overs!! it is truly sublime
Ingredients
- 4 pork fillets
- 1 1/2 tsp curry powder
- 30g butter
- 1 tbsp lemon juice
- 1 cup water
- 1 cup chicken stock
- 2 tsp lemon juice
- 2 tsp french mustard
- 2 tbsp cream
- 2 tsp cornflour
- 2 tsp water
- salt and pepper
Method
- Sprinkle curry powder on greaseproof paper and roll fillets in it. Melt butter in baking dish, add fillets and pour over lemon juice. Bake uncovered for 15 minutes, basting often.
- To make the sauce; mix the water, chicken stock, juice, cream and mustard in a pot and combine cornflour and water. Stir into the sauce so it thickens. Reduce heat, simmer uncovered for 3 minutes. Season to taste.
