Classic Baked Cheesecake

When my eldest son Ollie turned 21, his girlfriend of many years made this devine baked  cheese cake, I know a lot of people find cheese cakes too sweet this one is not like the others trust me, it has made  regular appearances in our house hold  since , Recipe by Georgia Simons

Ingredients


  • 1 packet Arnott’s nice biscuits
  • 1 tsp cinnamon
  • 1 cup caster sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • 450g cream cheese
  • 115g butter, melted

Method


  1. Preheat oven to 180ºC, fan bake. Line and grease a 20cm spring form tin.
  2. In a food processor blitz the nice biscuits, cinnamon and melted butter. Press mixture firmly in the bottom and refrigerate until required.
  3. In a food processor or hand held mixer, beat the cream cheese, adding the sugar gradually until smooth.
  4. Beat the eggs one at a time and add the vanilla essence. Beat until thoroughly mixed.
  5. Pour mixture into prepared tin and bake for 40 minutes. Once baked, turn off oven and let the cheesecake cool in the oven. Times may vary a lot, My oven so niggly, I set the timer for 40 mins cooked it further in 10 minute increments, until the centre just set and still wobbly
  6. To serve, top with whipped cream and seasonal berries. ( add the 1/2 tsp of cinamon and 1/4 ground ginger into the cream )
