Passionfruit and Coconut Puddings

This pudding is super easy, I always have a  pottle of the tasti brand passion fruit pulp  in my  pantry for this an other passionfruit requiring recipes ! Serve with  yogurt with grated lemon zest or with a table spoon of lemon curd blend in, they can also be cooked in individual ramekins reduce the cooking time so the puddings are just set in the middle, approx 20 mins


  • 1 cup desiccated coconut
  • 3/4 cup caster sugar
  • 1/2 cup plain flour
  • 4 eggs
  • 1 1/3 cups milk
  • 125g butter, melted
  • 1/2 cup passionfruit pulp
  • 1 tbsp fresh lemon juice
  • icing sugar, to dust


  1. Preheat oven to 180ºC. Grease a 23cm (base measurement) pie or flan dish.
  2. Combine coconut, caster sugar and flour in a large bowl.
  3. Combine eggs, milk, butter, passionfruit pulp and lemon juice in a separate medium bowl. Add to the dry ingredients and stir to combine.
  4. Pour mixture into dish and bake for 40 minutes or until pudding is lightly golden and just set.
  5. Serve warm or at room temperature dusted with icing sugar and/or topped with strawberries.
