Corn with Black Garlic Mayo and Parmesan

  • 8 fresh corn cobs
  • parmesan for grating
  • small handful parsley
  • 1 long red chilli, finely chopped

Black Garlic Mayo

  • 2-3 cloves black garlic
  • 1/2 cup mayonnaise


  1. Take the garlic out of its skin and mash with a fork until smooth. Stir in the mayonnaise.
  2. Cook the corn in boiling salted water until tender. Drain well.
  3. Brush with Black Garlic Mayo then top with a generous grating of parmesan and scatter over the parsley and chilli.
