Shaved Asparagus and Green Apple Salad with Mint Dressing

So when I tried to mandolin the asparagus it didn’t really work so I just sliced the spears lengthways as thinly as I could it worked well .Recipe by Dish


  • 200g of each green and white asparagus
  • 1 green apple
  • 2 tender inner stalks celery
  • 1 shallot, thinly slices

Mint Dressing

  • 1 tbsp chopped fresh mint .
  • 1 clove garlic
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp dijon mustard
  • sea salt and black pepper


  1. For the dressing, place all the ingredients in a food processor and process until smooth.
  2. Snap the tough ends off the asparagus and discard. Using a mandolin or vegetable peeler, start at the bottom of each spear and thinly shave the asparagus lengthways. Place in a large bowl.
  3. Quarter and core the apple then slice thinly. Combine all the ingredients with the dressing and gently combine.
  4. Transfer to a shallow serving platter and garnish with mint.
