Ingredients
- 1 whole orange
 - 1/2 cup dates
 - 1 egg
 - 1/2 cup softened butter
 - 1 1/2 cups flour
 - 1 tsp baking powder
 - 1 tsp baking soda
 - 1/2 cup sugar
 - 200g pot of apricot yoghurt or any yoghurt
 - 1/4 cup raw sugar
 
Method
- Preheat oven to 200 degrees fan bake. Grease a muffin tray.
 - Place whole orange skin and all in a food processor with the dates, egg and butter.
 - In a separate bowl sift the dry ingredients. Fold the dry ingredients with the liquid ones and then fold in the apricot yoghurt.
 - Place spoonfuls in the muffin tray, and place a teaspoon of the raw sugar on each one. Bake for 15 mins (maybe slightly less).
