Date, Apricot and Orange Muffins

They tend to burn on the bottom so cook them in the middle of the oven and keep an eye on them! Recipe by Lynne Perkins

Ingredients


  • 1 whole orange
  • 1/2 cup dates
  • 1 egg
  • 1/2  cup softened butter
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup sugar
  • 200g pot of apricot yoghurt or any yoghurt
  • 1/4 cup raw sugar

Method


  1. Preheat oven to 200 degrees fan bake. Grease a muffin tray.
  2. Place whole orange skin and all in a food processor with the dates, egg and butter.
  3. In a separate bowl sift the dry ingredients. Fold the dry ingredients with the liquid ones and then fold in the apricot yoghurt.
  4. Place spoonfuls in the muffin tray, and place a teaspoon of the raw sugar on each one. Bake for 15 mins (maybe slightly less).
