Date, Apricot and Orange Muffins

They can have a tendency to burn on the bottom so cook them in the middle rack of the oven and keep an eye on them! Recipe by Lynne Perkins.

Ingredients


  • 1 whole orange
  • 1/2 cup dates
  • 1 egg
  • 1/2  cup softened butter
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup sugar
  • 200g pot of apricot yoghurt or any yoghurt
  • 1/4 cup raw sugar

Method


  1. Preheat oven to 200°C fan bake. Grease a muffin tray.
  2. Place whole orange, skin and all, in a food processor with the dates, egg and butter.
  3. In a separate bowl sift the dry ingredients. Fold the dry ingredients with the liquid ones and then fold in the apricot yoghurt.
  4. Place spoonfuls in the muffin tray and sprinkle a teaspoon of the raw sugar on top of each one. Bake for 15 mins (maybe slightly less).
