Komal’s Chicken Wings

This gorgeous recipe is from Al Browns Stoked book and the story to how he came to this recipe is lovely, involing  one of his daughter’s friends Mother whom used to make these wings  and  there was always a  competition as to which parent would pick their daughter up from Komal’s always hoping for a taste of the wings  .

Ingredients


  • 1kg Chicken Wings/ nibbles
  • 2 1/2 tsp salt
  • 2 teaspoons tumeric
  • 2 tsp garam masala
  • 2 tsp coriander seeds toasted in a dry pan until fragrant
  • 2 tsp Cumin seeds toasted in a dry pan until fragrant
  • chilli powder to taste
  • 1 tablespoon chopped garlic
  • 2 tablespoons freshly grated ginger
  • fresh coriander for serving
  • Juice of two limes

Method


  1. Marinate the chicken wings/ nibbles by placing all the ingredients in a big bow land massage the marinade in using your hand, Cover and refrigerate for up to 2 to 3 days
  2. Preheat the oven to 180 degrees  or heat your BBQ to medium high heat
  3. Brush the wings with a bit of oil and roast or BBQ until cooked appts 30 to 40 minutes
  4. Toss over the coriander and squeeze the lime juice .
