Lemon Coconut Slice

This is an easy and delicious no bake slice. Perfect for making ahead of time and keeping in the fridge.


  • 1/2 cup sweetened condensed milk
  • 100g butter
  • 200g malt biscuits (or 100g malt, 100g plain)
  • 1 cup dessicated coconut
  • finely grated rind of 1 lemon

Lemon icing

  • 2 cups icing sugar
  • 40g butter, softened
  • 2 1/2 tbsp lemon juice


  1. Grease and line a 15cm x 25cm pan that is 3cm deep.
  2. In a small saucepan over a medium heat, place condensed milk and butter. Cook, stirring constantly until butter is melted.
  3. Place biscuits in a food processor and make fine crumbs. Combine crumbs, coconut and lemon rind in a bowl. Add hot butter mixture and stir until well combined.
  4. Press biscuit mixture into prepared tin. Refrigerate for 1-1/2 hours or until firm.
  5. For the lemon icing, place all ingredients into a bowl and beat with a wooden spoon until smooth.
  6. Spread icing over the slice with a spatula. Refrigerate for a further 30 minutes, or until icing is set. Cut into pieces and serve.
