Mum’s Lemon Pudding

Times have changed a bit but when I was growing up we had pudding every single night, this was one of my favourites Recipe by my Mum Lynne Perkins


  • 1 tsp lemon rind
  • 2 tbsp lemon juice
  • 1/2 cup sugar
  • 2 tbsp flour
  • 3/4 cup milk
  • 1 tbsp melted butter
  • 1 egg separated


  1. Preheat oven to 180ºC, fan bake. Grease a medium sized pudding bowl. Boil a jug of water.
  2. Combine in order the ingredients except the egg, separate the egg yolk and add to the mixture.
  3. Beat the egg white until stiff peaks. Fold egg white gently into the mixture.
  4. Turn mixture out into the pudding bowl. Place in a baking dish and pour around the boiling water so it comes up the sides of the pudding bowl to around halfway.
  5. Bake for 35-40 minutes until the top has turned golden.
