Self Saucing Chocolate Pudding

A true classic, one of the first times Guy came round for dinner at home, Mum cooked him this desert,  along with Eye fillet and Oysters to start , that same night he experienced his first gout attack !! But loved every mouthful and 27 years later he still asked Mum to bake it for him ,Can double the mixture and can also double just the brown sugar/cocoa/water mixture to have more yummy sauce! Ingredients


  • 115g flour
  • pinch of salt
  • 2 tsp baking powder
  • 55g sugar
  • 1 tbsp cocoa
  • 2 tbsp softened butter
  • 1 tsp vanilla essence
  • 1/2 cup milk
  • 6 tbsp brown sugar
  • 2 tbsp cocoa
  • 1 cup boiling water

Method


  1. Preheat oven to 180ºC. Grease a pudding basin/bowl.
  2. Sift the flour, sugar, salt, and baking powder. Combine the milk, butter and vanilla and add to dry ingredients and mix well.
  3. Turn out into the greased basin/bowl.
  4. In a separate bowl mix the brown sugar, cocoa and boiling water and pour over the mixture. Bake for 40-45 minutes.
  5. Serve warm with whipped cream or ice cream.
