Raspberry Coulis


  • 2 cups frozen raspberries, thawed
  • 2 tbsp icing sugar
  • good squeeze of lemon or lime juice
  • 1 tsp vanilla paste


  1. Put all the ingredients in a food processor and blend until smooth.
  2. Press the mixture through a fine sieve into a bowl and discard the seeds.
  3. Adjust the icing sugar and juice to taste. Serve at room temperature.
