Salted Caramel Sauce

Salted Caramel Sauce is possibly my biggest weakness. its just too good , It can be served over Sticky Date pudding or as pictured here a very naughty injection into Banana Chocolate Chip Muffins


  • 1 cup caster sugar
  • 1/3 cup cream
  • 1/4 tsp sea salt


  1. Put the sugar  in a medium saucepan and slowly  stirring to dissolve the sugar.
  2. when the  syrup turns a good golden colour, brushing off any sugar crystals from the side of the pot with a pastry brush dipped in cold water.
  3. Remove from the heat and carefully  cream and salt, taking care as the mixture will bubble up furiously.
  4. Return to the heat and simmer until the sauce is smooth again. Serve just warm.
