Chocolate Coconut Slice

Our version of the classic chocolate coconut slice has a softer, chewy base than the crunchy original. Recipe was given to me by Carolyn Simons


  • 125g butter, melted
  • 200g chelsea soft brown sugar
  • 1 cup plain flour
  • 1 egg, lightly beaten
  • 1 tsp baking powder
  • 2 tbsp cocoa powder
  • 3/4 cup dessicated coconut (extra to decorate)


  • 1 cup of chelsea rich chocolate icing sugar
  • 1 knob of butter
  • 1 1/2 tbsp hot water


  1. Preheat oven to 175 degrees, then grease and line a rectangular slice tin (19cm x 29cm) with baking paper.
  2. Beat butter, sugar, egg and vanilla in a bowl. Sift in flour, baking powder and cocoa and mix well, stir in coconut.
  3. Spread mixture into thin and bake for approx 20-25 minutes or until firm. Remove from oven and allow to cool.
  4. For the icing, measure the icing sugar into a bowl, add butter and hot water, mix well until smooth. Icing should spread easily but if too thick, add a little more hot water.
  5. Allow to cool and set before cutting slice.
