Chocolate Weetbix Slice

  • 3/4 cup desiccated coconut
  • 1 cup raisins (optional if kids not a fan)
  • 1 cup flour
  • 1 tsp baking powder
  • 1 egg
  • 1 cup sugar
  • 1 tbsp cocoa
  • 1 tbsp golden syrup
  • 110g butter
  • 3 crushed weetbix
  • 1 to 2 tbsp milk


  1. Preheat oven to 180ºC, fan forced. Line and grease a baking dish approx 27cm long.
  2. Mix together all dry ingredients.
  3. Melt butter and golden syrup, add a beaten egg. Add to the dry ingredients mixture. Mix well. If mixture looks too dry, add the milk.
  4. Press into a baking dish and cook for 30 minutes. When cool, ice with chocolate icing (refer to unbaked cake for icing recipe). Cut into squares.
