Mum’s Meringues

  • 4 egg whites
  • 8 tbsp caster sugar


  1. Preheat oven to 120 degrees, fan forced. Line baking tray with baking paper.
  2. Beat the egg whites with cake mixer or hand held beater until the egg whites form stiff peaks.
  3. Gradually add the sugar and keep beating until the sugar has dissolved.
  4. Place teaspoons full onto baking tray. Cook for 1 1/2 hours. Turn oven off and leave them in there for another 1/2 hour.
  5. To serve, sandwich with whipped cream.
