Unbaked Cake

World famous in our house another recipe that I have made countless times from a young age it is still an absolute banger Recipe by Lynne Perkins


  • 1 packet of super wine biscuits
  • 1/2 cup desiccated coconut
  • 125g butter
  • 1 egg
  • 3/4 cup sugar
  • 1 tbsp cocoa
  • 1 tsp vanilla
  • pinch of salt


  1. Grease and line a baking dish approx 27cm by 17cm.
  2. Boil in the pot the butter, sugar and cocoa. Once melted, take off the heat and add the vanilla.
  3. In a food processor blitz the biscuits into a fine crumb and add the coconut.
  4. When chocolate mixture is cool, add the egg and beat to combine. Add the biscuits and mix.
  5. Press into the baking dish and refrigerate to set.
  6. For the icing, sift 6 tbsp of icing sugar, 1 tbsp cocoa and mix with 1 tbsp boiling water, 1 tsp vanilla essence, and 1 tbsp of melted butter. Mix until a smooth consistency and ice once the cake has set.
