World famous in our house, another recipe that I have made countless times from a young age, and it is still an absolute banger! Recipe by Lynne Perkins.
Ingredients
- 1 packet of super wine biscuits
- 1/2 cup desiccated coconut
- 125g butter
- 1 egg
- 3/4 cup sugar
- 1 Tbsp cocoa
- 1 tsp vanilla
- pinch of salt
Method
- Grease and line a baking dish approx. 27cm by 17cm.
- Boil butter, sugar and cocoa in a pot. Once melted, take off the heat and add the vanilla.
- In a food processor blitz the biscuits into a fine crumb and add the coconut.
- When chocolate mixture is cool, add the egg and beat to combine. Add the biscuits and mix.
- Press into the baking dish and refrigerate to set.
- For the icing, sift 6 Tbsp of icing sugar, 1 Tbsp cocoa and mix with 1 Tbsp boiling water, 1 tsp vanilla essence, and 1 Tbsp of melted butter. Mix until a smooth consistency and ice once the cake has set.
