Wellington Slice

BEWARE – SERIOUSLY ADDICTIVE!  If I had to choose one last sweet thing to eat this would be it. I’m unsure where the recipe originated from, as I have had it for years and was handwritten.

Ingredients


Filling 

  • 60g butter
  • 1/2 tin condensed milk
  • 60g brown sugar
  • 1 Tbsp golden syrup

Base 

  • 250g kremelta
  • 4 heaped tsp cocoa
  • 1 cup icing sugar
  • 4 cups cornflakes
  • 1 cup coconut threads

Method


  1. For the base, place all ingredients in a large bowl and add the melted kremalta. Mix well and put half the mixture in a greased baking dish. Press it down firmly.
  2. For the filling, cook all ingredients in a pot until dissolved (about 3 mins). Pour the filling mixture over the base.
  3. Scatter the remaining base mixture over the top and place in the fridge until set. Cut into squares and keep in an airtight container in the fridge.
